Having less than 100 Snooping means you can fail and thus tip your victim off.
Personally, I don't see the strength in picking up Hiding/Stealth unless you're going to pick up Stealing and Snooping. And if you're really stealing with Razor macros linked to specific items like boats, you have absolutely no class.
Pick up a fast poisonable weapon and tactics with a floating 7th skill (50 magery and resist?) and you'll catch a lot of people off guard if they decide to attack you after you steal and you've got DP ready.

50 Magery
50 Resists.
I really wanted to work Lock picking into my build to really get that feel of a Thief that sneaks around, picking pockets, and managing to unlock any containers he comes across, but at the same time I'm sure its not really feasible to expect to do that and live after casing a mark half of the time. As for the macro's, it certainly does sound a bit stale. The largest attraction to me is (even though its a bit RPish) kind of tricking people by interacting with them, all the while checking them out and seeing what they've got going on in their bag my self. Just walking up to people and clicking a button hoping to jack a random or specific valuable item doesn't seem to enticing to me.
I'm sure that's true, but there isn't much room to fit it in there. I will have to accept the healing loss, as honestly this isn't going to be a straight pvp build. If I guess correctly, it will give me enough oomph to maybe force a mark to run after they engage me, and give me a chance to get away. The magery will be for nothing other than healing and recalling for the most part I'm sure, so if someone is able to punch through that healing and kill me, then I'm probably dead anyways.

Do not start with stealing, I was working on my dex stat and hit the pickpocket dip near NEW guildhouse and went from 0-45 in about 25 mins (no joke).

Well thanks for the dungeon template.If I do decide to make a bit of a stealthy dungeon character, I will probably wind up using that for sure. I still haven't created my character Zerbean, so what would you recommend I start with? I also don't know what you mean by a Pick pocket dip.
A pickpocket dip is just a training dummy for pickpocketing. I think there's one or two outside Lord Blackthorn's castle.
