should i just play a melee character at first? I would like to use magery, but it seems like it is sort of difficult to begin with.. I tried to kill a skeleton in the graveyard near Britain but i just run out of mana before I could kill it(using fireball). I picked 50 magery, 50 resist spells and 33STR,10DEX,37INT.. i heard meditation is the skill that helps mana regen, how much does it help?
my real problem is deciding on a template I guess. I'm pretty new to UO.. I've played it in the past briefly. I could simply go warrior which seems a lot less fun than mage, so any tips advice that could be given to a UO newbie is appreciated :)

If you're a complete noob, I would seriously recommend just messing around on the warrior template. You'll get higher skills in what you need (anatomy, healing, tactics, swords) and this way you can explore and kill **** pretty decently at first.
If you want to go mage you'll need to bowcraft for about an hour to feed him reagent/training money (50 lumber/fletching).
Start with 50 magery & resisting spells on your mage. Learn from npcs meditation, wrestling, tactics, and a fighting skill. You can go to a GY and hose zombies/skeletons and stuff with your weapon skill and lightning spam.

As a new player going with a melee would be much easier. I'm not saying it cant be done with a mage but they cost more to build and take longer before they are good. Start a character with maybe 50 str 20 dex and 10 int and resist / healing 50.
Go hit some dummies for melee skill gain and use anatomy on everyone you cross.
You should be good to go much faster than with a mage

Is there a quick way to equip/unequip a weapon? I'm not really looking for a a quick way to be good. I prefer to role mage, just need tips for that path.

Download this application :
http://www.runuo.com/razor/
It's a tool that will help you do a lot of stuff. Equip weapon, open doors for you, have regs counted and a lot of other great things.
As for how to start a mage from scratch, As vinrindi said your best bet would probably be to get some gold from LJ/bowcrafting first.
There is no easy way to start a mage :)

I wouldn't drop your str too much because you will end up getting killed in 1 hit.
maybe 50 str / 10 dex / 20 int.
They fixed the stats gain now so you should be able to gain int .
Just run an eval int macro and target random players while hunting
Just make sure you dont cast something and random target someone as it will attack them :)
You can loop spirit speak macro to gain int too. It will work better while hunting

Wow you can macro while minimized with razor, that's awesome. How long can i train on dummies?

I'd recommend picking up provo/music in the beginning. It keeps the monsters focus off of you and can really help to gain in your main skills since it's difficult to survive, let alone kill stuff early on as just a mage or a warrior, you can always drop it later once you're strong enough to do without provo. It can be macro'd in the glow zoo very easily and cheaply from 0-60 in one night while you sleep, maxing at about 71-73 off of the giant serpents. You wanna start off with the rats, move up to bullfrogs/toads, then bulls/snow leopards, then the grizzly bear, scorps and then serps.
[This may be info overload but better that than being without advice I suppose!]
With 70 music/70 provoke and 50 magery, 50 med and 60s hiding(dropping it later, just good defensive skill I like for newbie chars) you can take on earth eles quite nicely, while working up wrestle on them as they fight each other. I started with 50 magery/50 resist, macroed hiding, med with magic wiz hat, and music and prov and was good to go. Marked a rune to brit and shame and I am pretty much set for paying for magery as I work it organically now. That is maybe 2-3 days worth of macroing.

You can train to 25 each fighting skill. It's a waste of time though.

30, and it's not a waste. it's good for stat gains, and easily afkable.
a pretty standard mage thing to do is afk macro a training dummy while hiding, to get wrestling to 30 and hiding up a bit as well (never hurts noob templates)
as for provo, i'd say skip provo if you go warrior, and go peace instead. it's probably a bit more noob friendly and easier to figure out how to use effectively. you can macro peace overnight easily and still be effective with it the next day. provo = better money but peace is easier to use for warrior-types. so peace for noob warrior and provo for more advanced mage down the road.

More efficient to bowcraft and train to 30. Especially with the new stat gain changes.

if you take provo dont bother with musicianship, its a waste of a starting skill. 50 magery, 49 provo, 1 sword <---- best newbie template imo
